Food is not simply a fuel. It is an excuse for friends, old and new, to gather together, a celebration of regional idiosyncrasies and specialities. It is part of our cultural identity.

One of the great joys of travelling is being able to pull up a chair and break bread with the locals, seeing where ingredients are sourced and even learning a traditional recipe or two. It is, quite literally, the best way to get a taste of a destination.

 What better way to bring a little bit of adventure into your home than with a recipe inspired by travel? Whether you’re a hiker hoping for a feast, a cyclist searching for a snack, or a seasoned traveller wanting to recreate that rooftop mojito moment with friends, finding ways to fit those flavours back into your daily routine will always remind you of your travels.

I was fortunate to travel with Exodus’ Chianti Walking & Wine tour. We were able to visit southern Tuscany which is the perfect place for a relaxing guided walking holiday. Based at the tranquil Villa Casalta, on our tour we visited beautiful San Gimignano, the market town of Greve in Chianti, the UNESCO World Heritage Site of Siena and the magnificent city of Florence. During the week, we sampled several varieties of the world-renowned local Chianti and had the opportunity to learn more about Italian wine at the Wine School of Siena.

This recipe can be found in the cookbook and brings back fond memories of my trip.

Aperol Spritz
classic italian aperitif
(serves one)

INGREDIENTS
ice cubes
3 parts Prosecco
2 parts Aperol
1 part soda water

METHOD

  • Half fill a tumbler with ice cubes
  • Pour in the Prosecco, followed by the Aperol and top up with a splash of soda.
  • Drop an orange slice or wedge into the glass and serve at once.
