If you haven’t been to Ted’s Bakery on Oahu’s North Shore, then you need to make a stop for this wonderful local bakery. They have a wide variety of local and popular baked goods, but they are most famous for Chocolate Haupia Pie.
Chocolate Haupia Pie is a delectable local Hawaii dessert that combines rich chocolate with a creamy coconut pudding layer called haupia, all nestled on a flaky pie crust. It’s a delightful treat with a light coconut sweet flavor making it truly an irresistible treat.
Where can you find Chocolate Haupia Pie?
Like I’ve mentioned before, Ted’s Bakery carries Chocolate Haupia Pie and for those on Oahu who can’t make the trek to the North Shore, can buy it at the local grocery store like Times Supermarkets. Occasionally I’ve also seen it being sold at Napolean’s Bakery.
What are the ingredients for Chocolate Haupia Pie?
This Chocolate Haupia Pie recipe has at least three layers of ingredients to make this onolicious pie:
Flaky Pie Crust:
- Flour
- Salt
- Sugar
- Butter
- Ice Water
Haupia Pie Filling:
- Milk
- Coconut Milk
- Sugar
- Water
- Cornstarch
- Semi-Sweet Chocolate Chips
Whipped Cream:
- Heavy Cream
- Coconut Milk
- Sugar
How do you make Chocolate Haupia Pie?
To make Chocolate Haupia Pie, there are three different stages to do so:
Pie Crust
- Add divided flour, salt, and sugar to a food processor. Pulse 2-3 times until combined.
- Add cubed butter over the flour mixture and process until a dough or paste forms.
- Add remaining flour and pulse 4-5 times until flour is distributed or the dough looks crumbly.
- Transfer to a bowl then sprinkle iced water over mixture. Keep adding water until the dough holds together.
- Remove the dough and form it into a ball. Cut the ball in half and form each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
- Remove one disk from the fridge and roll it out on a lightly floured surface.
- Layer dough into a pie dish and optionally crinkle the edge.
- Layer parchment paper onto the dough, then layer on shaped foil. Add on some pie weights like dried beans. This will prevent the dough’s bottom from bubbling and its sides from collapsing.
- Bake at 400° F for 20-30 minutes or until the crust is golden. Set aside to cool to room temperature.
Chocolate Haupia Filling
- Dissolve the cornstarch and water together.
- Heat the coconut milk, milk, and sugar in a saucepot.
- Add remaining flour and pulse 4-5 times until flour is distributed or the dough looks crumbly.
- Add the cornstarch mixture and stir constantly until it thickens.
- Melt the chocolate chips and mix in half of the coconut sauce.
Whipped Cream
- Combine the heavy cream and sugar. Beat until it begins to form stiff peaks.
- Top it off on the haupia layer.
Assembly
- Then layer on the leftover haupia or coconut mixture.
- Lastly, top it off with the whipped cream.
- Let it chill in the fridge for 1 hour or overnight.
