Christmas isn’t that far away.  Is eggnog part of your holiday traditions? 

One of my fondest memories of Christmas is my Dad making eggnog for us.  I love eggnog. Store bought (I wish you could buy it year-round.) or homemade; it’s my all-time festive drink and something to look forward to.

While this isn’t my Dad’s recipe; it’s one the Deerfoot Inn & Casino shared with me after I gobbled up theirs at a company get together there a few years ago.  YUM!

Deerfoot Spiced Eggnog
6 ea. eggs separated
¾ cup sugar
1/2 tsp vanilla
1/8 tsp nutmeg
1/8 tsp allspice
1/8 tsp cinnamon
1/8 tsp ground ginger
Pinch of clove
2 cups whipping cream 50% whipped
2 cups 2% or better milk

Cream egg yolks with the sugar, add all dry spices and whisk. Whip cream to 50%.  Whip whites to stiff peaks.  Stir cream into yolk mixture gently fold in whites.  Taste and serve.

Note for thicker more rich eggnog, add another egg or two and reduce the amount of milk a little to desired tastes.  Of course, the option of adding some rum is there as well.  I am Jamaican after all!
