Any meal is incomplete without a Greek Salad, known as ‘Horiatiki’ or ‘Xoriatiki’ by the locals. Sticking a cold fork into this mix of cucumber, tomatoes, red onions, feta, oregano and black olives is the most refreshing (and healthy) way to cool off from the sun. Like all Greek dishes, it’s best shared with friends – and enjoyed with a light red wine vinegar and olive oil dressing.

Have you ever tried a Greek salad? I think it’s one of my favourite salads!

You need:
• 1 cucumber
• 2 tomatoes
• 5-6 cherry tomatoes
• 1 small onion
• 1 small green pepper
• Black olives and capers
• Oregano
• 100g feta (or goat cheese)
• 3 tablespoons olive oil
• 2 tablespoons apple cider vinegar – Remove the skin from the tomatoes (that´s my grandmother´s trick)
– Cut the tomatoes, cucumber and cherry tomatoes into pieces
– Slice the pepper and onion – Assemble the salad as shown and dress it with oil and vinegar
